I scoured the internet looking for solutions which led me here. I have had success installing a Ring Video Doorbell Pro without any prior doorbell wiring. Here’s what worked for me:

The Edwards transformer with the adapter plate is rated for the enclosed space.
I then made a new hole in my wall for the new box, just above a light switch and adjacent to the outside wall where the doorbell is located.
I took a 16" drill masonry drill bit and drilled through the brick outside - all the way in to where the new electrical box was located. As the box was on a wall perpendicular to the outside wall, it took 16" bit to make it to the box.
I routed some AC wiring from the switch to area where the new box would be installed. I then fed the low voltage wire from the outside at the doorbell to the box location.
I then mounted the transformer to the adapter in the box.
I then installed the box - feeding both wires into it - one on the low voltage side, one on the 110v side of the adapter.
I fastened the box to the studs, hooked everything up and put a cover plate on the box.
Hooked up the low voltage wires to the Ring and mounted per the instructions.
It’s been up and running for several months with no issues whatsoever!
