Is there a way to simply get the temperature from the Iris Motion Sensor and display it? I would love to have a Stringify or IF Do button that I could press and get the temperature from the sensor. All that that the SmartThings app seems to expose is changes in temperature to which an action is taken and not just a simple report of the temperature

Are you wanting to see it on your phone? Or do you Amazon Alexa? Would you line it sent to you via text upon request or at a scheduled time?

Check out EchoSistant. You can just ask your Alexa what the temp is and it will tell you.
