Since the update, the humidity for my indoor tree is hard to see the changes since the temp fluctuates more than the humidity. The old graph was easier to see the history of the humidity changes.
Welcome to the new app and how it consolidates those 2 attributes. I personally hate this for the same reasons as you, plus I have a ton of other devices that report temp/humidity and I would prefer separate tiles like what Classic use to do.

It’s definitely a bit confusing. But for automations the humidity still works as advertised. I found the aqara reports humidity the best/fastest.
