I know there are smart camera’s that have a microphone you can use to trigger a action, but are there also perhaps microphone-only devices? perhaps that work with zigbee?

What’s the use case? Just the level of noise? A specific noise like glass breaking or a baby crying? Spoken instruction? Different devices offer different kinds of acoustic monitoring.
and at least the camera’s allow you to set sensitivity level. I have a dog at home who barks when we are not there, and i want to create something that rewards the dog for silence periods at home. So giving him a snack somehow.
