New to ST and combined with Hue. I would like some lights to gradually dim down over the course of a few hours, and also gradually increase over a few hours. What is the best way to achieve these tasks?

Look into the Community developed app named CoRE
The Stock SmartThings App can not do what you are suggesting.
Sure it can
