I might be best to exclude it properly from your hub. Go to the hub card on your phone..Under settings go to Z-wave utilities and select Z-Wave exclusion..Now put your device in pairing mode again. This will properly exclude it from the hub.
If you press on select different driver, does it give you other driver options?
There’s another screen called Information with the most interesting information.
And what is shown when you click on Select different driver?

Before finding this thread I thought I’d be stuck with a “dumb” fire/smoke detector.
I see that you mentioned you were trying to pair with a V2 hub. I just recently went through the same process. I tried pairing multiple ways (add using qr code, scan nearby with qr code security, scan nearby with 6 digit code security) and all stalled and failed with the “processing” time out. I have a spare/backup Aeotec Hub (V3) so I plugged that back in. The detector paired on the first try. I know that probably doesn’t help you, but points to there being an issue with the V2 hub.
Well that fits. I was able to get to that same point i.e. it’s stuck on processing. Not sure what to do. In the past, I think there were issues with having to redo everything when upgrading hubs. Not sure if smartthings has made the upgrade easier.
You mention the v3 hub as a backup.Are you using the v2 and v3 in a hub group?
I was able to get further by doing the zwave exclusion and scan nearby.it found the device and gave me the option for secure setup:
The thing is, that I don’t have that device (or any Z-Wave devices).
What happens when you click on the Setup button?

So, to finish the story… I then added the dsk code and was hopeful since the complete code matched the card provided with the first alert device but unfortunately the device never finishes “processing” as described by @5spot
I even left it processing overnight only to wake up this morning to find it still processing.
Do you think it could be a v2 hub issue?

No I do not use a hub group. I was using the Aeotec hub until I started to hit its memory limit and so I “upgraded” back to a V2 hub.
From what I read online, it sounds like it’s better to stay with the v2 hub i.e. the cons of the v3 outweigh the pros
