You can find lots of inspiration on the quick browse lists in the community created wiki.
In particular, look at the project report section at the list for “impress your friends.” That will take you to most of the topics where people have discussed the coolest stuff they’ve done or seen, everything from a secret bookcase room to a magic wand. 
And the “get started” list has topics like “the top 10 things to do with SmartThings” and “what device should I get next?” Which can also be inspirational.
