How to turn off a switch based on flood sensor input

Maybe I’m missing something here but…
I want to turn off an appliance outlet based on moisture being detected.

I see a smart app that will let me turn ON a pump, but no option to toggle a switch OFF.

Can someone point me to how I would achieve this?
