I just purchased a house that has an alarm system already installed. The magnetic sensors on the doors are hardwired back to the main alarm control panel. Is there a way I can ‘piggyback’ onto those sensors to include them into my SmartThings hub? Connect some sensor to those wires that come from the door sensors to activate a zwave sensor.

Some panels yes. You need to determine exactly what make and model panel you have to determine what is possible…
For DSC PowerSeries and Honeywell Vista panels, there’s a way to use an IP interface board. There’s also Konnekted which is a panel replacement. There may be other options, but model number matters.
