I have a couple of CAT5 data jacks in my kitchen that I’ll never use moving forward. We are doing a remodel, and I"m curious if there’s anything I could throw in these single gang boxes that could be PoE powered that might be “fun”. Any thoughts?

Perhaps a raspberry pi with a PoE hat and a display?
Most of the really fun stuff like TVs and electronic sign boards draw a huge amount of power, so kind of a waste unless you really wanted one there to begin with.
For stuff under 15 W, I think the usual categories are VoIP, surveillance cameras, Wireless access points, and digital audio.
The only one of those that’s really “fun” is probably digital audio.
