Is it possible to see the commands that ST hub sends to devices? Something that contains the endpoint, payload and clusters?

To the best of my knowledge, SmartThings does not provide any such tool(s); though you might be able to get some of this functionality with 3rd party tools and software (e.g., Z-Wave USB stick and XBee modules)…
