it keeps on going offine with my hub V3 with firmware 000.058.00010
if i start the hub or restart the thermostatt then it start working again for couple of hours and then goes again in offline state.
Hub and Thermostatt both are updated to the latest firmware versions. They are very near to each other. The device physically works fine all the time. its not hanged, only seems to be the connection between the hub and the device get lost after couple of hours.
My hub has a fixed IP Address in router settings. Hub is connected to router over the LAN (not WIFI)

Have you checked if controlling the physical thermostat brings it back online? I see you mentioned it works. This is just to confirm if the connection becomes fully unresponsive until the restart.
Could you please provide the following information?
Submit the hub logs when the Matter device goes offline and take note of the date and time, and share it with me, including your timezone (for example: October 14th at 11:47 am GMT-6).
Select the time period and confirm - In this step, please select “Until turned off”, once the team finishes, we’ll let you know so you can disable it again.
